Who doesn’t love the classic s’more? Graham crackers, marshmallows toasted over a campfire, melted chocolate… the tried-and-true combination of crunchy, gooey and melty is the stuff childhood summertime memories are made of. But how about taking s’mores to the next level? These nine twists on the classic s’more run the gamut from peanut butter and lemon curd to cupcakes and ice cream.

1. Peanut Butter S’mores

This is such a simple trick, but will lead to “oohs” of delight from everyone who adores the combination of chocolate and peanut butter (is there anyone who doesn’t?). Spread one graham cracker with a thick layer of peanut butter (creamy, crunchy, salted, or unsalted; up to you) before sandwiching the toasted marshmallow and chocolate together with another graham cracker. For a more epic peanut butter s’more, replace the standard milk chocolate with a Reese’s Peanut Butter Cup. Oh my.

2. S’mores Pie

If you really want to get everyone’s attention at the cottage, try bringing out a glorious S’mores Pie to close out a lazy summer lunch.
Mix together 2 cups of graham cracker crumbs and 1 stick (½ cup) melted butter, then press into a greased 9-inch pie plate. Bake for 8-10 minutes at 350°F, then cool. In a saucepan over low heat, bring 1 cup heavy cream and ½ cup milk to a simmer, remove from heat and add 10 ounces chopped semisweet chocolate. Stir until chocolate has melted, then add ¼ teaspoon salt and, slowly, 2 lightly beaten eggs. Pour this into the crust and bake until filling is softly set but still wobbles a little in centre, about 25 minutes. Cover pie with marshmallows then put under broiler, on low, for 2-4 minutes until golden. Let cool, and refrigerate for 1-2 hours before serving.

3. Lemon Meringue Pie S’mores

For those of us who like a little tart with our sweet, replace the milk or dark chocolate with tangy lemon curd to create a one-bite s’more version of lemon meringue pie. Actually, you could melt some white chocolate between the lemon curd and the toasted marshmallow, too, if you can’t bear the thought of no chocolate at all…

4. Vegan and Gluten-Free S’mores

Gluten intolerance and veganism are on the rise in Canada for health, ethical, and lifestyle reasons. But there’s no reason why dietary restrictions should prevent anyone from experiencing the delight of a perfectly toasted s’more during a beautiful cottage weekend. Scour your local health food store or Whole Foods for vegan marshmallows (Dandies is one brand available in Canada and online) and gluten-free graham crackers (or if you’re really brave, make your own!), and no one will have to decline dessert at the camp-fire.

5. S’mores Ice Cream

For an incredible easy yet delicious s’mores ice cream that kids and sweet-toothed adults alike will love, soften good-quality vanilla ice cream then stir through mini marshmallows, roughly crushed graham crackers, and mini chocolate chips. Return to freezer until set, then serve in scoops. For extra s’mores decadence, top each serving with marshmallow fluff and hot fudge sauce.

6. Oven S’mores

Just imagine: you’ve finally escaped to the cottage for the weekend, but your entire trip is rained out (or it’s winter and snowing!) and there’s no way you can keep a campfire going outside. Never fear, oven-baked s’mores are here! Simply preheat the oven to 400°F and line a cookie tray with foil. Break 4 graham crackers in half and place on tray, topping each with a square of milk or dark chocolate and then a large marshmallow. Bake for about 5 minutes, until the marshmallows are golden and puffy, then immediately press another halved graham cracker on top. Enjoy!

7. S’mores Buffet

Create a s’mores buffet for your next party at the cottage, and you’ll be the talk of the town (or the sparsely-populated back country). Lay out a range of different flavours of graham crackers, marshmallows, chocolate, and fillings, and allow everyone to mix-and-match all manner of combinations. Buy or make plain, cinnamon, and chocolate graham crackers; cocoa, berry, caramel, and cinnamon marshmallows; white, milk, and dark chocolate; and fillings like dulce de leche, jam or jelly, and Nutella. The possibilities are endless.

8. S’mores Cupcakes

Bake a batch of your favourite chocolate cupcakes. Once they’ve cooled, whip up a batch of Italian meringue or, for an easier version, grab a jar of marshmallow fluff. Use this to generously frost each cupcake. With a kitchen blowtorch, toast the meringue or marshmallow frosting until lightly golden, then stick a piece each of graham cracker and dark chocolate (or a Hershey’s square, for the classic taste) into the frosting. The only thing better than how these s’mores cupcakes look is how they taste.

9. Cookie S’mores

Bored with graham crackers? Have an excess of chocolate chip cookies, peanut butter cookies, sugar cookies, or, well, any type of cookie lying around? Try using two cookies to sandwich together the chocolate and toasted marshmallow next time you’re sitting around the campfire, and trust us: you may never be able to return to normal s’mores again.
